Chicken Stir Fry

This is what was for dinner last night.  This is another recipe that makes enough for 2 meals during the week if it's only 2 of you eating.  It's also good cold for lunch if you like.

3-4 boneless chicken breasts
Frozen stir fry vegetables
Garlic Powder
Mrs. Dash Seasoning Salt
Soy Sauce
Olive Oil
1 cup white rice

I use a wok for this but if you just have a deep pan that would work also.

I cut the chicken into thin long slices.

I put the olive oil in the pan and put the chicken in and cook until done.  Then I add the frozen stir fry vegetables, garlic powder, Mrs. Dash seasoning salt and stir.  I put some dashes of Soy Sauce as they cook together to keep from drying out.

While this is cooking I cook the rice. 

Once everything is cooked I like to put the stir fry on top of the rice on your plate and then I like to add more soy sauce on top of this.

Pork Chops

Okay this is another easy peasy recipe but one of my favorites and great for 2 people.  I prefer to use my cast iron skillet for this one but any pan would work. I serve this with whatever vegetables you prefer.  I used frozen mixed vegetables. 

4 Boneless Pork Chops - pork chops with bones work great also
1 can Cream of Mushroom Soup
1 can Milk
Olive Oil
No Yolk extra wide noodles

Preheat oven @375

Prepare noodles per bag instructions and drain once they're done. 

Brown 4 pork chops in Olive Oil - 5 minutes each side as they will continue to cook in oven.
Remove from pan and place in an oven safe dish.
Mix 1 can of mushroom soup and 1 can of milk in a separate bowl. 
Pour into pan and warm to incorporate all  brown bits on bottom of pan.
Pour over pork chops. 
Cook uncovered in oven for 45 - 60 minutes.

Pour soup & milk mixture over noodles and lay pork chops on top. 

Viola and enjoy. 

And of course all meals taste great with a glass of wine.

Chicken Parmesan

Okay guys this is a really easy peasy recipe but very good.  You can serve this with any vegetables you want to prepare.  Sometimes I do beans & rice or frozen vegetables.  It's your choice. 

Boneless chicken breasts - usually 3-4
Seasoned salt
Olive Oil
Grated Parmesan Cheese

Preheat oven to 350
Place chicken in a shallow baking dish.
Sprinkle with seasoned salt.
Drizzle olive oil over chicken.
Generously cover with grated parmesan cheese.
Bake in oven uncovered for 1 hour.
No need to turn chicken..

Viola there you have it.  I told you it was easy.  I am learning to season by sight and taste and not always measuring.

Shepherd's Pie

Made this last night and it is absolutely delish and again an easy recipe.  Since I cook for only 2 this recipe is great for another meal during the week or weekend. 

Here's the recipe:

2 cups instant mashed potatoes.  You could make fresh if you wanted.
3/4 lb ground turkey
3/4 cup picante sauce
1/3 cup water
1T ground cumin
1 chopped onion
1 can whole corn - drained
2 tsp sugar
1/8 tsp salt
1 (15 ounce) can kidney beans, drained and rinsed.
1/2 cup shredded cheddar cheese

Prepare mashed potatoes according to package directions; keep warm.



Cook turkey and onion in a large nonstick skillet over medium-high heat until browned, stirring to crumble.Stir in picante sauce, water, cumin, sugar, salt, beans and corn.  Bring to a boil.  Reduce heat and simmer until mixture thickens 

 
Remove from heat.  Spoon mashed potatoes over meat mixture and sprinkle with cheese.  Cover
and let stand 2 minutes until cheese melts.  Then place on your plates and viola dinner.  Enjoy.

Italian Delight Casserole

This is what I cooked last night for dinner.  It was my mom's recipe and the only casserole that my dad would eat.  This makes enough to feed 8 people but because it freezes really well you'll always have something you can pull out and heat up on those nights you don't feel like cooking.  Okay here's the recipe.

1 lb ground beef or round
1 onion
1 green bell pepper
1 can cream corn
1 can diced tomatoes
1 box cooked elbow macaroni - 2 1/2 cups
Olive Oil
Salt & Pepper
Tobasco Sauce
Worcheshire Sauce
1 cup grated cheese
350 oven

Cook your elbow macaroni while cooking everything else, drain and set aside once it's done. 

Chop your onions and bell pepper and saute in olive oil or oil of your choice.  Add meat and brown and stir often. 
Add other ingredients and season with salt & pepper, dash of tobasco sauce & 3 1/2 tsp Worcheshire Sauce.  This is best highly seasoned. 

Mix your elbow macaroni, meat dish and handful of cheese in your casserole dish.  Put cheese on top once everything is mixed. 


Sorry don't know why this one is at this angle.  Can't seem to fix it.  Oh well you get the idea.

Bake at 350 in your oven uncovered and this is what you'll have for dinner.

Chicken Pot Pie

Okay let's do another recipe.  This is extremely easy and a great way to use up any cooked boneless chicken breasts you may have made earlier in the week.

Pie shell - I buy these frozen and put one in a pyrex pie plate
1 can Campbell Cream of Mushroom Soup
1 (10oz) package frozen mixed vegetables - thawed
1 cup cubed cooked chicken or turkey
1/2 cup milk
1 egg
1 cup all-purpose baking mix

Preheat oven to 400 degrees.
Mix soup, vegetables and chicken in a bowl.  It's very important to not mix milk with the soup. 
    Ask me how I know this. 
Pour into your pyrex pie plate. 
Mix milk, egg and baking mix.  You can add more milk if you need cause you want to pour this over your chicken mixture. 
Bake 30 minutes until golden. 
I usually let it sit for about 10 minutes after pulling it out of the oven so it can set up and easier to cut. 


Beef Stroganoff

Okay here's my first dinner recipe.  This was so easy and tasted great.  I'll be posting the recipe and pictures and I'll let you know now I'm not a great photographer.  Here's the recipe:

3/4 package (8 ounces) wide egg noodles
1 pound ground beef
1/4 cup chopped onion
2 cups sliced mushrooms
2 TBS flour
Beef broth - I love having this in a box so I can use what I need and put the rest in my fridge. 
1 cup sour cream
Salt & Pepper

Cook egg noodles, drain and set aside.
In large skillet, brown beef and onions and drain.
Add mushrooms, cook 3 minutes or until tender.
Stir in flour.
Add brother, bring to a boil, stirring constantly.
Boil 1 minute.
Remove from heat and whisk in sour cream.
Salt and pepper to taste.
Mix with noodles and viola you have a great dinner. 

I'm also learning to eyeball my ingredients rather than doing an exact measurement.
